Kotlety po-kyivsky and Holubtsi: truly Ukrainian dishes you can cook right now
Ukraine is known all over the world for its traditional cuisine. Classic dishes are fairly simple in ingredients and don't require the skills of a Michelin-starred chef. Some of the most popular are Kotlety po-kyivsky, Golubtsy and Ukrainian borscht.
Kotlety po-kyivsky is perhaps the most famous Ukrainian dish with the name of the capital in the title. It is prepared from minced chicken, stuffing a cutlet with cold butter (sometimes with mushrooms), then it is breaded and fried. The dish turns out juicy and is high-calorie.
Holubtsi (cabbage rolls) are not so fatty, because they are made from lean minced pork, which is wrapped in a cabbage leaf. Sometimes rice or buckwheat is used instead of minced meat, and grape or beet leaves are used instead of cabbage.
Then the Holubtsi are stewed in tomato sauce and served as an independent dish or with boiled potatoes.
